Ingredients
- 1 can of Smoked Salmon with Lemon & Dill @geomarseafood
- 2 eggs
- 1 handful of fresh spinach
- Salt
- Goat cheese
- Pesto
- Olive oil
- Chives or another herb for garnish
Preparación
- In a bowl or blender, combine the eggs and fresh spinach.
- Add a pinch of salt.
- Blend the mixture until smooth and frothy.
- Heat a non-stick pan over medium heat with a drizzle of olive oil.
- Pour the spinach and egg mixture into the hot pan, spreading it evenly across the surface.
- As the tortilla begins to cook, spread a thin layer of pesto over the surface.
- When the base is almost cooked but still soft on top, add pieces of goat cheese on one half of the tortilla.
- Place the Smoked Salmon with Lemon & Dill on top, reserving the oil from the can for a final touch when serving.
- Using a spatula, carefully fold the tortilla in half.
- Cook until the inside is firm and the outside is golden.
- Remove the tortilla from the pan and serve on a plate.
- Drizzle some of the reserved salmon oil on top to enhance the flavor.
- Garnish with chives or your preferred fresh herb.
